Lemon Shrimp Scampi

Sunday nights in our house are known as PASTA SUNDAYS because it is typically the night we have pasta for dinner. This originally started as a nod to “Sunday Family Dinners” on the show Jersey Shore – say what you want but that show had an impact on my life hahaha. This Sunday, I was a little sad because Lou is back to working night shifts but I continued the Pasta Sunday tradition even if it was just the cats and I. I decided to make a Lemon Shrimp Scampi. The recipe I used is similar to Ina Garten’s (my hero) recipe with a few adjustments. I used spaghetti noodles because it was what I had on-hand and added tomatoes. This came out really good! Another delicious Pasta Sunday for the books. Definitely give this one a try!
